
Why do I make these unique things? I like my mushrooms cut into wedges, not flat slices, because there is more body to the crunch when I bite them and I like that. Flat slices are flimsy, and stick to surfaces in an unattractive manner. The hexagonal form helps guide you to keep the segments the same size (if it bothers you!).
You could even use the Mushroom Wedgicator to make baby Hasselback potatoes or Hasselback mushrooms for a twist on the classic.
